I've always believed there must be a specific diet for each individual---if one could just figure that out. And that is exactly what Eleonora Gafton can do. My husband went to Eleonora to learn how to balance his diet to maximize his endurance bicycling and lost 20 pounds in a couple of months. I have osteoporosis and it occurred to me that I should be seeing her too to try and tailor my dietary requirements. And that is what she has worked with me to modify ....to identify areas where I might be low like zinc and B12 and iodine and ways to improve my mix of nutrients. But that is not all, because she has also identified a significant problem with not sleeping well and has also addressed this area and appr opriate exercise in her plan and recommendations. She has taught us how to improve the nutrient content of foods like grains and nuts through soaking them;and how and where to buy foods are not depleted by agricultural methods. She has also helped empower us with better understanding about the physiology and role of nutrients in the body. Because she takes an integrative health and nutrition approach to guiding her clients, she is able to determine how recommendations are working and then refine suggestions along the way. I wish I had known her years ago to ensure I was getting the necessary nutrients when doing long distance bike riding. The information that I’ve learned so far from your courses
is so enlightening. I wish they were mandatory courses for high school student because I so strongly believe we would be far healthier if we knew this information. Knowledge is power. I was certainly challenged this course. I’ve taken probiotics and ate fermented foods from dairy,
but I’ve always avoided items such as sauerkraut and kimchi. Nor has I ever tried a fruit kvass. I’m so grateful for this course. It’s taught me how to enjoy foods I probably would have never otherwise introduced into my life otherwise. There is so much power behind fermented foods,
and I find myself now suggesting them to individuals around me who complain of constipation or difficulty digesting foods. In the past when I’ve made broths or stocks, I prepared them for nutritional benefits
and flavor. However, I must admit, I found myself turned off if the result was very gelatinous. Having learned the benefits of a gelatinous stock and that they are packed with collagen, my attitude has completely changed. In fact, the gelatinous outcome excites me because I know
that it’s a sign of a nutrient dense stock with tremendous bone and joint benefits. My least favorite concept was the organ meats. I have a greater appreciation for them, but I strongly disliked the taste. However, I’m determined to master ways to prepare organ meats because I believe in the words of Jack LaLanne, “eat to live, don’t live to eat.” Overall, the perfect way to end this course was with the GAPS diet. It reminded me of the very reasons I joined this program. I’ve been through my own health journey with my cardiac conditions, and my partner with his Lyme disease journey. We both had to seek this
information on our own and through trial-and-error. Our western medicine doctors never wanted to touch upon nutrition, but we both believed there was a link and importance behind it. If our gut isn’t working, it can cause a serious of other conditions and issues. Which is why I believe health should always be evaluated in the gut first. The GAPS diet was a reminder to why I’m on this journey – to help other individuals heal their relationship with food and ultimately eliminate other symptoms and problems along with it. It’s an excellent foundation to implement with all clients because the pace can vary on the individual. In the Introduction Diet Information, it discusses performing a sensitivity test by drying the food on your wrist overnight. I’m going to implement this practice on myself! MUIH Student - Camila S.
“When I first went to Dr. Eleanora Gafton for consultation on digestive issues I was taking 80 mg a day of Prilosec and was still experiencing distressing levels of heartburn from the condition known as GERD. My condition was exacerbated by a small hiatal hernia but it was responsive to correction through diet. Eleanora began the process of teaching me how the stomach and esophagus are affected by what things I was eating. I am a person who is highly compliant with medical suggestion but only if I understand the reasons for those suggestions; Eleanora gave me detailed explanations, accompanied by information sheets on a wide range of needed information related to GERD. As a result I was motivated enough to adjust my diet in many ways. With the help of herbal supplements she weaned me from the Prilosec over a period of about three months, and motivated me to eat a largely green leafy, whole grain non-wheat diet. Three years later I am still free of GERD. In the process I've learned to "read" my body's reactions to various foods. I now easily identify any food missteps by how I feel, and have learned to happily decline foods that don't enhance my well being. In the three years of care I have lost 25 pounds without traditional dieting, am now free of anti-depressant medication, and have established an exercise program that I actually enjoy. None of these goals were easily achieved. Her patient, repeated explanations of nutritional functions combined with encouragement in her completely non-judgmental environment gave me the ability to take control of my health. EleoNora came to me at a time in my life where I felt my systems were running slow; like a computer that needed some much-needed upgrades. "When I came into Eleorna's cooking lab at MUIH, I considered myself a cook who was able to prepare a wide range of basic dishes using whole foods. Eleonora's series of cooking labs took my cooking knowledge and skills from basic to the next level. I now regularly use these skills in my profession as a clinical nutritionist that teaches one on cooking classes to some of my clientele. One of the most successful things about the cooking classes was how they built your skills and confidence in the kitchen. Starting with the foundation of knife skills was a great place to begin getting the class up to speed and on the same page for all the cooking to come. I fell into nutritional oncology because I was teaching cooking classes at the gym that I was calling "Healthy in a Hurry." I had to bring in all of my own cooking equipment as it was just an old coffee cafe counter I was cooking at (covid shut down the coffee stand and I asked if I could teach a class or two with the empty space). An oncologist smelled the food after her workout and stopped and watched. She got our information and asked if we could do weekly cooking classes at the cancer center. From there, most of those patients wanted nutritional support, which has built my client base. I teach cooking classes in a conference room every week. It is great because I have impacted so many people's lives there and I have shown them, if I can cook this healthy food, with minimal dishes, and no kitchen, you can do this in your kitchen, no problem! I always talk about how I was lucky enough to choose a school that had a cooking course and a chef + nutritionist as a teacher, what a great combo! So, I teach them knife skills and how to use minimal gadgets (which is more cleaning) if we just know how to use our knives. I just thought that doing this work when people share their gratitude for my work it makes my work that much more enjoyable and like I have found my purpose in life. Hey Dr. Gafton. I just wanted to tell you how grateful I am for you and these highly important cooking labs! I officially started seeing clients in the telehealth clinic this trimester, and my eyes have been opened to how many people want to start cooking at home but don’t know where to start because of a lack of confidence in the kitchen. These labs bring so much applicable knowledge that it is imperative for clients to be successful with any of the behavior changes we are suggesting.
