Dr. Eleonora Gafton

Eleonora Gafton is an associate professor and professional certified chef in the Nutrition and Integrative Health program at the Maryland University of Integrative Health, one of the nation's top graduate schools for health and wellness studies. Growing up on an organic farm and winery in Romania, she developed a passion for natural foods. Eleonora is a certified European chef who completed her training at Ministerul Turismului International in Bucharest, Romania,  She then worked in a three-star hotel, becoming the first female executive chef in a communist country. She later received a bachelor's degree in hotel management from Cornell University and worked in the hotel industry in Washington, DC, for 20 years. Eleonora also holds a doctoral degree in clinical nutrition (DCN), a master's degree (MS) in herbal medicine and clinical studies, a PMC in Nutrition from the Maryland University of Integrative Health, and a certificate in health coaching (CHHC) from the Institute for Integrative Nutrition in N.Y.
Eleonora is a Certified Nutrition Specialist (CNS) and Licensed Nutritionist in the State of Maryland (LDN). She practices a combination of conventional, holistic, functional, and complimentary nutrition and health coaching, including telehealth throughout the Metropolitan Washington, D.C. area.

She specializes in those with chronic disease, such as but not limited to gastrointestinal discomfort, diabetes, cardiovascular and vascular diseases, depression, arthritis, allergies, and weight issues. Eleonora's private practice in Alexandria treats patients nutritionally and as a health coach with all levels of illness. She holds nutritional workshops and seminars at venues in Alexandria and Maryland.

As a Doctor of Clinical Nutrition, an Herbal Medicine practitioner and Health Coach, CNS, Eleonora is a master in the use of herbs, whole foods, and dietary supplements.

Dr. Gafton is the 2022 recipient of The James Truby Community Service Award honoring outstanding service to the local, regional or national community. Dr. Gafton was recognized for her work with community outreach nutrition programs and service to her local community through her church. James Truby was a long time MUIH Board member and supporter of MUIH. He was fiercely committed to community service as evidenced by his active involvement, leadership position roles, and support of many non-profit organizations. 

Dr. Gafton is the 2021 recipient of the MUIH Teaching Award which recognizes faculty members who demonstrate excellence in teaching and associated activities within the past academic year. These individuals embody the mission and values of MUIH in their teaching, mentorship and interactions with students. Their teaching evaluations reflect their commitment to quality, innovation and adaptability in a progressive environment.
